Setting fonts for gnome applications on remote displays

I'm running some gnome applications on a remote (cygwin/X) display.  How
do I configure the fonts used?  The local Appearances applet just sets
things for the local display.  Are X resources used?

Apologies if this is a simple question, but I've done a fair bit of
searching round and not found anything.
