Hi Mark,

You can configure your preferred applications under System -> Preferences -> More Preferences -> Preferred Applications.

This is on FC 6 + Gnome

Or just launch gnome-control-center (from a command prompt) and select 'Preferred Applications' ... The list of applications is limited to browser / mail-client / terminal .. Not sure how the rest of the file-type associations can be done graphically.
