It kind of depends on your browser.  In Galeon, go to
Settings >Preferences >Handlers.  Select the application/pdf line and
enter the program you want in the appropriate column.  I use acroread.
I  also have AlwaysUse column =true and AskUser=true.  But that is a
matter of preference.
