I think the GUI itself is unnecessary on a server, but (as I think
someone already mentioned) some of the X/Gnome apps can be really handy.
I must admit that I am not using gedit anymore though. I put nedit on
the server - the context highlighting is really handy when I'm trying to
tweak a CGI script.
(Please don't try to sell me on gvim) ;-)
