That's nothing to do with Gnome---that's to do with what filesystems
your operating system supports. Linux can support HFS, if you wish
(it's an option when you compile the kernel)---I presume the BSDs can
too.

Yes. Personally, I'd use the command line for this kind of thing. On
Linux (and some other Unices), stat does this kind of thing.
