oh sure you can edit the config files .. it's text ... it's just not however
meant to be editted by joe user ... it's in .gnome/panel.d/ ... 

I just always backup the panel.d directory if I wish to backup my config ...
if I want to edit it however I just run the panel with that config ... it's
far easier to change with the gui ... plus the gui does sanity checking ...
