I would like to provide a GIMP mirror at http://www.gimp.ca/mirror/ (and I guess I'll make / a redirect to http://www.gimp.org/

What's the organization sponsoring the mirror you'd like us to include?

The organization is Aceldama Systems and I already run irc.gimp.ca on this host. I don't really need a link on the sponsor list. The mirror is in Montreal, Canada, North America. I am not mirroring any other FOSS project.
