An alternative might be to position the menus so that, on opening,
the most recently used entry is next to the mouse pointer instead of the
top of the menu. That's harder when the panel is at the bottom of
the screen. I say "mouse pointer" here deliberately, I don't know if
changing menus on the fly is good for accessibility, but my gut feeling
is tht it probably isn't.
The open look design let users choose a "default action" for any menu,
usually implemented by control-dragging an indicator. When you clicked
a menu, the label was shown as a "preview" so that if you didn't want it,
you could drag out and cancel. Having a default happen when you
duoble-click doesn't give that visual feedback, and there's also no
visual clue that you can do it. I'd probably expect double-clicking on
the foot to bring up "menudrake" or some other menu editor for instance.
Or maybe a shortcut to www.buyshoes.com.

I often open a menu folder just to see what's in it. How would this
behaviour be affected?
