The process you're trying to describe is "desaturation".

For a sample: Start the GIMP, load an image such as a photograph.
Right click on the image, go to Image, Colors, Hue-Saturation. Drag
the "Saturation" slider all the way to the left to see
"grayscaleness", drag the "lightness" slider all the way to the right
to see "whitening".

This is in GIMP 1.1.26.
