I'm a member of the Ubuntu Doc team. We've recently helped write
documentation for a couple of GNOMEy projects (deskbar-applet and
brasero), and would be happy to help with the Empathy documentation if
you like.

Previously, one or two students from our mentoring programme have
written the bulk of the documentation, and a more experienced member of
the team has been on hand to help them out and review their work.
