You don't have to use the same sections used in the template. It's
meant to be a guide, but feel free to modify it to meet the needs of
your document.

As for your other questions - colored tables and the Default gtk+
theme, I hope others can help. On my machine, the Default gtk+ theme
was there to begin with, so if you don't have it I don't know where to
get it.
