No 'actual' screen other than the whole screen becoming grey during a very short moment.

Right, so gnome-settings-daemon is either not running or aborting. Try:

/usr/libexec/gnome-settings-daemon --debug

And see if it exits at some point. With g-s-d running the screens
should show up.
