-p is an instrument config. option, and is currently only
applicable to a single instrument, the ColorMunki.

You can use other instruments to measure projectors,
but they don't have a special mode for it.

(I think I'll changed dispcal and dispread to automatically
 fallback to display mode if the instrument doesn't have
 a projector mode, to make them a bit more forgiving).
