Tenies raó, ara ho he aconseguit...

Primer, cal configurar el "language-selector" (l'eina per a canviar l'idioma de Gnome) i posar-ho tot en anglès. Aleshores cal editar els fitxers /etc/environment i /etc/default/locale amb el contingut (a més del text que ja tinguessin):

Ens trobarem que ja tenen:
LANG="en_US.UTF-8"
LANGUAGE="en_US:en"

Afegim:
LC_CTYPE="ca_ES.UTF-8"
LC_NUMERIC="ca_ES.UTF-8"
LC_TIME="ca_ES.UTF-8"
LC_COLLATE="ca_ES.UTF-8"
LC_MONETARY="ca_ES.UTF-8"
LC_MESSAGES="ca_ES.UTF-8"
LC_PAPER="ca_ES.UTF-8"
LC_NAME="ca_ES.UTF-8"
LC_ADDRESS="ca_ES.UTF-8"
LC_TELEPHONE="ca_ES.UTF-8"
LC_MEASUREMENT="ca_ES.UTF-8"
LC_IDENTIFICATION="ca_ES.UTF-8"


I finalment tindrem les finestres en anglès però totes les dades de moneda, temps, etc, en català/castellà
