I don't think this is possible, neither with the built-in GIMP EXIF window 
(File -> Properties, Advanced) or with the GIMP EXIF plug-in.

When I clicked OK from File -> Properties, Advanced after changing one of the 
EXIF lines, GIMP-2.8.18 displays the following in the terminal where I started 
GIMP:
     Not implemented yet (EDITOR_PROC)

So I think you will need to find another tool to change EXIF.
