gedit-developer-plugins provides a multi-file find and replace plugin.
https://launchpad.net/gdp and there is a PPA for debian/ubuntu users to
install the built packages from.

I think you really want a tags browser. Most IDEs use built a file/db of
all the symbols in a project and use the to show locations and
definitions. I am not aware of a plugin that uses a something like an
etags file for a project.
