There is no such setting is my version of Geary. Does this mean it's
not possible to do this unless using a new version?

Go in the Preferences and uncheck the option "Always watch for new
mail".
BTW, I suggest enabling the backports and upgrade to 0.11.2 (lot of
improvements):
