Thanks for the help everyone. 

It turns out that f-spot works just fine if you swap the ~/Photos dir
for a symlink, and if that symlink is pointed at an NFS mount, you can
indeed keep all your photos on one drive and allow multiple boxes to
access it. 

I've yet to set it up properly, but testing worked just great, now i
just have to redo the storage box the way i want it and we're in
business :)
