ah, so there are actually two issues, unrelated to each other. Okay.

With respect of the line breaks in quotations on Reply and such, the
Edit->Preferences->Composer Preferences->Wrap quoted text in replies,
influences the wrapping. It's on by default, I think. Another option is
to mark quoted text and change the paragraph format from Normal to
Preformatted.

And being it for the message preview, then Edit->Preferences->Mail
Preferences->Headers tab and add/check it there, in the list of headers
to be shown. This option doesn't influence the message composer, only
the message preview.
