This is almost never a useful thing to do in Linux. As a general rule,
all user-specific config data is preserved when you remove a package,
so reinstalling it has no effect. This isn't Windows.

You can remove the specific files from your home directory (look in
.config/evolution and .local/share/evolution), or (more usefully) try
running Evo from a fresh user account to see if it behaves differently.
