Hello,
the GConf contains only account definitions, and the part you restored
only definitions for mail accounts, not for anything else. You may want
to restore whole ~/.gconf/apps/evolution instead.
But, if you have an evolution backup (not the home folder backup, but a
backup created by the evolution), then you should rather use
File->Restore Evolution settings and point it to that file. If not, then
before running evolution (preferably from a real terminal, without
running GUI session), restore apart of GConf files also ~./evolution,
where all your mails/contacts/events/memos/tasks are stored.
