It's the default in gnome-icon-theme hence not Evolution-specific:
http://git.gnome.org/browse/gnome-icon-theme/plain/gnome/24x24/places/folder-saved-search.png

You could change it locally by replacing 
/usr/share/icons/gnome/.../places/folder-saved-search.png
