I was under the impression that the plain text version of an email is
not created by Evolution - all Evo does is to select the correct version
of a multi-part-alternative email.  The fact that the plain text version
is badly formatted compared to the equivalent HTML version is down to
the sending MUA.

The best thing is probably to look at the source of the email to see
what versions are available in it and the differences in their
formatting.
