As a test you could try shuting down Evo completely (i.e. use
"evolution
--force-shutdown") and edit the relevant Evo mbox file to remove the
lines with blank fields. (Making sure you have a backup copy of the
file, just in case.) Start up Evo again and see if the date is now
correct.

I do not think it will help at all. The Date header is just missing in
the source Eudora mbox file, that's why the summary shows "?" in the
date column. When you open the message, then the Date header is added by
evolution (or maybe slightly earlier, during the import) to the current
time you opened/imported the message.
There can be stored a date in the "From " header delimiter in the mbox
file, apart of the message, so maybe Eudora used this date, instead of
the Date mbox header, but Evolution is not obviously using that value to
fill missing Date header.
In other words, Evolution does its "best" to provide you with a Date
value, but when it's not present in the message, then it's not shown in
the summary. Deleting ~/.local/share/evolution/mail/local/folders.db (or
just ~/.evolution/mail/local/folders.db) file will enforce summary
recreation the next start, but it'll show those current times, which has
nothing to do with the actual Sent date of the message.
