Tried that... no dice... Unless there is some other solution, I'll have
to go through, mark them for offline one at a time... and then unmark
them... ugh (a couple hundred folders)...

You can do it on a per-account basis:
"Edit->Preferences->account->Receiving Options->Automatically
synchronize remote mail locally" should do what you want, I think,
though I've never used it myself.
Note that there's no need to unmark them. They'll synch when they can,
but if you're offline of course they won't.
