Hi Felix,
          I think these options don't require any document if you are
familiar with Open Office or Microsoft Word.These give same result as
they provide.  
Plain text,you can use after enabling HTML option from Format menu.After
selecting HTML in composer window,you can use many option like
bold/italic,change font color,font size etc.
