Ah, I use a self-signed cert so I had to tell Evolution to accept it

What's wrong with that black magic? Seems to work well so far... What would be the
alternative and why is it better?
The problem will be, that your email client thinks it connects to
localhost, although it connects to mailhost. You will get into trouble
if you want to do SSL because your client will find a certificate signed
to the wrong hostname.
The alternative would be, as I stated, to proxy your traffic through a
proxy.
