[Evolution] Editing the evolution date string

Hi folks,

Can anybody tell me how to permanently modify the format of the
evolution date string.

For example I may only wish the date and not the time to be displayed as
the first line of my reply, such as:

On 25-02-07 Ms x wrote:

Rather than:

On Mon, 2007-02-25 at 17:57 +1100, Ms x wrote:
>

I may be overlooking something painfully obvious but I cannot find a
solution.
