I'm doing something similar (I'm using Gnome evolution-2.2 2.2.3),
syncing my mail between my laptop and desktop (both Fedora 4). I use
rsync, and the files I include when syncing my mail are the following
(in rsync exclude-file format):

+ ~

+ ~/.spamassassin
+ ~/.spamassassin/**

+ ~/.evolution
+ ~/.evolution/**

+ ~/.gconf
+ ~/.gconf/apps
+ ~/.gconf/apps/evolution
+ ~/.gconf/apps/evolution/**

+ ~/.gnome2_private/Evol*
+ ~/.gnome2_private/Evol*/**
