We've considered adding the functionality to override the message
subject and I don't think notes would be out of the question, it's just
a matter of time.

no, because it would alter the original document.


How about attaching annotations, or Notes to a existing mail.

MS Outlook had a feature called Journal, which allowed me to associates
documents, pictures, .. to a email.
