I receive quite a lot of Microsoft Office documents (".doc" files)
mainly because most of my friends use Windows. These documents arrive as
attached files and I would prefer if Evolution would allow me to open
them with OpenOffice but I only get the option of "save as" when I press
RMB. The contents help states in section 2.2.3.1: "... attached word
processor files can be opened in OpenOffice.org or another word
processor ...". These word processor files are probably not Microsoft
word but with proper configuration Evolution ought to be able to let
OpenOffice process them.
The mentioned Microsoft word files come in as "application/msword". How
do I tell Evolution to let OpenOffice process them?
I run Evolution 2.0.4 on Fedora Core 3.
Evolution itself does not know about the file types. There are no
special cases for Evo, it offers in the drop down whatever the GNOME
Desktop Environment has.
Those associations today are done by .desktop files. Unfortunately I
don't recall the exact way GNOME 2.8 uses, but I think it's the same.
I suppose you can't open the saved .doc files by double clicking it in
Nautilus too, right? Just add it to the known file types of OpenOffice,
and Evo should offer OpenOffice to open that attachment. [1]
If it still doesn't, you probably need to tweak the relevant .desktop
file and add application/msword to the MimeType list.

[1] Which is done since 2.8 IIRC by right clicking the file,
Preferences, then pick the application to open files of that type.
