What do these Junk, Not Junk buttons do, other than move emails back and
forth from the folder Junk, if I have disabled all spam checking from
inside of Evolution Settings?  

junk filter is a virtual one. that means that all messages remain in
their folders, but if you mark them as junk they will get a flag which
says "this is junk". now they behave like "deleted" (but are not) and
also will be shown up in the junk folder.

I have since, already figured out that the Junk / Not Junk buttons have
to do with teaching the spam filter and  not anything to do with
Trash :).  

no, trash is trash and junk is junk. :-) although i also don't get the
sense of that (marking mails as junk obviously means that i do not want
to read them), a bit related perhaps to
