Plain http doesn't work, as port 80 on that machine is closed. Port 443
is the only one open.
I can access OWA just fine, either with a web browser, or with the
following command:
Prompt$ wget --http-user=MYDOMAIN\\myusername --http-passwd=mypasswd
https://<server-address>/exchange/<email-account>/
This pulls back the correct index.htm page, no problems.
When I enter the same url into the OWA-location box in evolution I get
the same-old "authentication error" problem. I can take a deeper look
into it with ethereal, but all I can confirm is that the connection gets
made, not that anything is sent correctly as the whole conversation is
encrypted.

I'm using evolution on FC4 connecting to exchange with no major
problems. I just used the Create new mail account dialog from within
preferences to setup the account and it works fine.
You also need to make sure you can access Outlook Web Mail from the
machine your using as that is what it uses to talk to the exchange
server.
Can you try plain http and see if that work?

I then run ximian-connector-setup-2.2 to try to create my exchange
account. It lets me enter the OWA url (which I can verify with 'wget
--http-user --http-passwd' works just fine and isn't a redirect). My
OWA url is of the form:
https://<server>/exchange/<email-address-prefix>
I enter this URL, and then enter my login as:
DOMAIN\username (note that my username is different than my
email-address-prefix)
I get the error message "Could not authenticate to the Exchange
server. Make sure the username and password are correct and try
again."
In addition, I get the following libsoup critical error on stdout.
Nothing in any syslogs.

There seem to be a number of both fedora and gnome bugs surrounding
this issue (http://bugzilla.gnome.org/show_bug.cgi?id=302183 cheif
among
them?)
but I'm not totally sure they're applicable to me.
If it's any help, it's just regular old http-basic authentication on
OWA, over HTTPS.
Any ideas? I'm comfortable building from source if that's
necessary...anything to get rid of this other windows box under my
desk!
