Yes, I mean the contacts and calendar items stored locally on my
computer.
Regarding my questions about calendars, after playing around a bit more
with Evolution and Outlook, I decided I will just have one calendar
(namely, the calendar stored on the exchange server) and one contact
list (again, stored on the exchange server). That way no synchronization
issues will occur. I will transfer the contacts by one of the methods
you suggested.

You can select all contacts in your personal address book and copy
them to your Exchange address book. Or export them as VCF file and
import it to Exchange contacts folder.
For Exporting contacts you need to use evolution-addressbook-export
tool.
For appointments, you can copy an appointment from your personal
calendar into your Exchange calendar folder. Or save your
appointments as ICS files and import them to Exchange calendar folder.
