[Evolution] how to edit 'from' line when composing

Hi,

Is there any way to edit the 'from' line in a message I'm composing?
Sometimes I like to customize that line for the recipient, using the
'plus' convention.  That is with my mailer, name+foo host by default
goes to name host    That makes it easier for me to sort replies.   I
could create a separate account in evolution for each recipient, but
that's overkill for rare recipients.
