And before you ask - no, you cannot adjust the column wrapping occurs at.
A couple of reasons for this:
1. the mail rfc suggests/specifies a particular setting for text mails (which are the only ones affected).
2. its ui clutter

Switch to text/plain (Composer: Format / [] HTML)... ;-)
Seriously: Word wrapping will be used for text mails. The display of
HTML mails (like your post) depends on the receivers mail user agent,
where word wrapping most likely will occur at the window borders.
