Note that if you have mail sitting in your outbox, it will keep track
of the setting when the mail was sent (i think).
So make sure you clear it out and send a fresh mail when the setting
changes.
IIRC changes to the account settings will affect mails queued in Outbox.
At least I changed the SMTP hosts several times when I forgot to change
it before sending -- and yes, it works. :)
This said: Does the mail in Outbox actually does "know" more than its
respective account?
(Caveat: I remember reports of the "sending mail" dialog to still show
the wrong account after changing the account settings. This was just a
display bug though and already fixed, IIRC.)
