There's a problem with GnuGP and Evolution: when I send a mail to a
friend, and this friend uses Outlook, the mail appears empty.
Not sure, as I never used Outlook, but it sounds like this is just
another way of (not) displaying unknown MIME structures...
Evo only knows PGP/MIME and does not understand the old PGP/Inline.
Unfortunately most mail clients still seem to use inline these days...
PGP/Inline support is planned for forthcoming Evolution 2.0:

What can I do?
Do not use Outlook. "Friends don't let friends use Outlook." ;)
Seriously, if Outlook really drops that MIME part entirely, you will
have to wait until PGP/Inline is implemented in Evolution or you are
stuck to encrypt/sign manually and send this text...
