he meant in the View menu ("default" in the menu means it uses the
charset specified by the mime part -or-, failing that, it uses your
configured charset)

I don't have a 'default' option for character encoding in Evolution. I
have several Chinese, Hebrew, Western European, etc., but no 'default.'
