use mailto syntax with evolution's command-line

evolution-2.0 mailto:fejj ximian com

that's just an example of course, but you can set any header there and
add attachments and even set the conet of the message body.

Script signatures are evaluated as HTML always, even if you are
composing text/plain mails.

That means, you need to insert "<br>" instead of "\n".
