run gnome-font-properties
(its in the user control panel if you have a gnome desktop)

The default is probably 'sans' or something (i use bitstream vera sans,
finally a readable font other than 'fixed').

Ask microsoft to fix their character set names ...

Actually, evolution should detect these broken messages and fix them
transparently, from memory, so it could be another issue.  If you
specify the charset in the view menu, this 'fix' wont happen either.
