If you want to verify your environment variable it is

echo $VAR_NAME

In a terminal.  Notice the dollar sign out front, needed for echo, but
not export!
Be sure to start evolution from that shell *only* otherwise it won't
work.  The command is simply... 

evolution

Therefore don't just click the icon.  Run it from the shell.
