It's evolution (as opposed to evolution-wombat). CPU on that process
spikes to 90-95% for 2-5 seconds.

Wild guess time: I've noticed that if you drag the composer window at
the same time as this is going on, the screen updates of both the
composer and the main shell window are massively delayed. Whatever it is
that is happening is either getting in the way of, or being interfered
by, the gtk screen updates.

Again, this only occurs when the cursor is in the To/Cc fields, and then
one moves focus elsewhere in the app.
