I have recently migrated my wife from an ancient Mac to a modern Linux box, 
running RH 8.0 with Evolution 1.2.2.  Aging eyes and long years of experience 
with Eudora have left her less than overjoyed with Evo -- something I hope to 
correct by customizing it more to suit her needs and wishes.  In particular, 
she needs more control over the font used to display the contents of the 
active folder (usually the Inbox).  Knowing how customizable most 
Linux/Gnome/Ximian ... etc products usually are, I'm pretty sure I just 
haven't found the right place to tell it I want a larger font for the folder 
contents display.  Where should I look and what should I tweak to make the 
print there larger?

I had a similar problem, when installing a new system. The other way
round, though: Fonts in Evolution (Gnome1 app on a Gnome2 desktop) where
way too big.

Creating a file .gtkrc.mine I could change the font size. Set 120 to the
size, you like. HTH
