If it is sorting by subject then it is because the messages that you
have are not setting a In-Reply-To: or References: header. Evolution
uses Message-Ids primarily, but if a message doesn't have a In-Reply-To:
or References: header, then it has no choice but to thread by subject or
not thread at all.
