You can't, unless you use pre-format which doesn't wrap.

Its intentional, so that the plain text version of the mail is properly
formatted according to RFC guidelines (mails should always be easily
viewable on an 80 column text terminal).

If you use html mail, the other end will wrap to screen size anyway.
