Perhaps you're confusing MAPI with IMAP.  They are two different
protocols.

There are two concepts here:
1) server storage of content
Exchange servers can store mail folders and calendar/tasks/contact
folders.
IMAP servers can store mail folders and that is all.

2) client capabilities to view that content.

in order to view Exchange folders you must have an exchange (or other
MAPI capable) client.  The only ones I know of are made by Microsoft,
they are:
Exchange Client
Outlook
OWC (Outlook Web Client)
I think Lotus Notes can talk MAPI, but I'm not sure.

in order to view IMAP folders (e-mail only) there are several IMAP
clients available on all platforms, some examples:
Outlook
Evolution
Netscape Mail
Outlook Express
Balsa
... and a multitude of others.

Bottom line.

Evolution is not an exchange client, and therefore cannot be used to
replace an Exchange client.  If, however, you are using Outlook as your
PIM/e-mail client, then Evolution can easily replace Outlook for those
purposes.

    Contact and Calendar data has no business being stored in an IMAP
    folder, IMAP is for mail.
    
    Moving contact and calendar data to the local addressbook/calendar has
    nothing to do with POP.
