You need to have gnome-spell and aspell installed to get spell checking
in evo. 
I'm running evolution-0.16.100-snap.ximian.200111051531,
gnome-spell-0.4-ximian.1, aspell-0.33.7.1-ximian.2

But, I'm also running on RH 7.2
