Having several main windows open simultaneously would partly solve the
problem. However, if I want one calendar window, one mail window and
one contact manager window I would need to open three main windows and
then manually configure them to show just one component. It would be
nice if there was a possibility to open a calendar window, a mail
window or contact window either from an existing evolution window, but
more desirable from the command line (or a desktop icon). Maybe with
command line options like "evolution --calendar", etc would be a good
idea?. If the shortcuts panel then could be hidden no space is no
longer wasted. :)

Well, you'd need that space for switching between folders within one
application anyway, so it's not actually wasted.
You cannot e.g. look at your calendar and email simultaneously.
Useful drag-and-drop functions between the applications become
difficult or impossible to implement.
We're fixing this gradually. You can open messages in separate windows
now. I'm pretty sure the plan is to be able to have multiple main
windows eventually.
