Further to this, the same problem exists when chooseing fields to
display etc...


That's not entirely a bug. For instance, you want to see the "To"
address in the "Sent", "Drafts", and "Outbox" folders, but the "From"
field in other folders. However, there ought to be a way to configure
a default...
